A protein-packed vegan burrito filled with black beans, rice, fresh vegetables, and a spicy kick from D’Bocas Hot Sauce. Perfect for quick lunches, easy dinners, or meal prep.

Ingredients

  • 4 large flour or whole wheat tortillas.

  • 1 cup cooked rice (white or brown).

  • 1 cup cooked and drained black beans.

  • 1 cup sweet corn (fresh or frozen).

  • 1 red bell pepper, sliced.

  • 1 avocado, sliced.

  • ½ red onion, thinly sliced.

  • 2 tablespoons olive oil.

  • Salt and pepper, to taste.
     

For the creamy spicy sauce:

  • 3 tablespoons vegan sour cream or unsweetened vegan yogurt.

  • 1–2 tablespoons D’Bocas Hot Sauce (adjust to taste).

  • Juice of ½ lemon.

Instructions

  • Sauté the veggies:

Heat oil in a large skillet over medium heat. Add bell pepper and onion, sauté for 5–6 minutes until tender. Season with salt and pepper.

  • Make the creamy sauce:

In a small bowl, combine vegan sour cream, lemon juice, and D’Bocas Hot Sauce until smooth.
 

  • Assemble the burritos:

Lay out tortillas and layer with rice, black beans, corn, sautéed veggies, and avocado slices. Drizzle generously with creamy spicy sauce.
 

  • Roll and serve:

Fold in the sides and roll tightly. Warm in a skillet for 1–2 minutes to seal and crisp slightly, if desired.
